1 lb fresh sea scallops (the big ones)
1 lb your favorite bacon (thin sliced, the thinner the better)
- Cut the lb of bacon in half, cutting through all the slices.
- Wrap 1/2 slice of bacon around each scallop, securing with a toothpick.
- Heat large skillet on med-high and add the scallops to heated skillet.
- Cook until bacon turns brown and crispy, turning every couple of minutes. Overall cook
time is about 15-20 minutest depending on size of scallops.
The perfect size scallop is one in which 1/2 slice of bacon wraps all the way around
with just about a 1/2 inch overlap, which is where you would stick the toothpick in.
