Preheat oven to 375 degrees.
Ingredients:
1 bag 32 oz frozen cubed hashbrowns- defrost b4 cooking** 1/4 cup margarine 1 small onion finely chopped 16 oz
sour cream 1 can cream of chicken soup 1 3/4 cup shredded cheddar cheese Salt and pepper for taste- or garlic
salt and lemon pepper 1/2 cup shredded cheddar cheese (save for topping) 1/4 cup Italian breadcrumbs
Procedure:
In large casserole dish put margarine and onion. Microwave until margarine is melted and onion is tender. In large bowl
(the bigger the better) pour onion mixture in and add all ingredients except ½ cheese and breadcrumbs. Mix, mix, and mix well.
Pour back into casserole dish. It still will have a little margarine on the bottom so it wont stick. Cover and bake 40 minutes.
Uncover and add cheese and breadcrumbs that have been mixed together. Bake 10-15 min until cheese on top is melted. You
can do many varieties with this; you can add cooked chicken or ham and make it a meal. I love cheese so I use 1/2
the amount of sour cream and use a can of cheddar cheese soup. Also for a crispier crust you can use crackers or
corn chips. This great for a potluck, it makes a lot and everybody loves it. Be prepared and take recipe with you
because everyone will want it. ** To defrost put on counter for a couple of hours or lay them flat on cookie sheet
for a half of an hour.
